#22 Cheeseburger Bites -easy, fast, crowd pleaser
Life is hard, food doesn't have to be [vol1, 9.2]
It comes together quick in one bowl. Sort of a cross between a burger and egg bites. I love that it's easy, fast, nutrient dense, and full of protein!
The recipe is versatile, esp if you use a lot of eggs...just be sure to add more salt if you add more eggs. You can halve or double or definitely freeze. We are going through food at an astounding rate so freezing food is a pipe dream.
1.5 lb uncooked ground beef
7 eggs or more
1.5 cup shredded cheese
1c quick oats
1/4 c + ketchup
1/4 c + mustard
1/4 c dill pickles finely diced (relish would work here as well)
1.5 t sea salt
1/2 t black pepper
1/2 t smoked paprika (optional and yummy)
Mix and scoop into sprayed muffin tin. Bake 21 minutes at 400* till golden.
Notes:
I made a larger batch because my ground beef is in 2 lb packages from the butcher. (What would one do with a half pound of meat?) I just eyeballed a little extra of the other ingredients. I’m telling ya, it’s a versatile recipe.
Also made a smaller batch for John and didn't use any oats. He loved them. If you’re gluten free, you can skip the oats. I like the oats for a bit of texture and bulk.
Don’t skip the dill pickle. It’s a must. But if you hate pickles, skip.
I used 3 different muffin tin pans - each of varying quality. This is the first time I've seen such a stark difference in muffin pan quality. Made me want to get more higher quality ones. Definitely spray pan well. I used a coconut oil spray to avoid the gross industrial oils.

That’s not a condescending self-hatred statement. God didn’t wire me with a desire to make gorgeous desserts and I’m OK. However, He did give Zoe the talent, patience and drive to perfect a gorgeous dessert. If you read her description, she almost lost her religion trying to perfect the apple roses. God makes all kinds of people; I’m so glad we’re all different.
I was compelled to pray for a friend several times this week. Last night I finally texted her and said I was praying. She responded that it was the anniversary of something very difficult. I didn’t remember. But God did.
