Creamy Golden Chicken Soup
THIS IS A FALL FAV IN MY HOUSE.
Hit the easy button and use a rotisserie chicken. The ingredients are all optional. Leave something out if you don’t like it. Have something that needs used up in the fridge? Toss it in.
Sauté in coconut oil or any fat:
1-2 onions, chopped
3-4 carrots, chopped
3-4 ribs of celery, chopped
fresh garlic & ginger, optional
sea salt
Spices
1t of each or more
cumin
coriander
curry (I like more)
turmeric (use more)
1/2t cayenne if you like spice
*some people don’t like curry or use the other spices…it’s fine to omit any of the above spices. I like lots of flavor and use a lot of spices.
Add
meat from one rotisserie chicken, about 3lbs meat, chopped
1-2 cans pumpkin purée or roasted squash.
1-2 cans full fat coconut milk
1+ quart broth, homemade preferably, more if you like thinner soup.
Optional: add a cup of red lentils and simmer for 15 minutes to cook the lentils. They’re small and won’t be detected by picky people. It stretches the soup while adding fiber and minerals we need.
Salt to taste. Garnish with almonds or any fresh herbs like parsley or cilantro.
Optional: a pound of cauliflower rice or frozen kale or spinach if you like more veggies.
Stretch the soup (or serve to pickier eaters) with a big scoop of rice in the bottom of the bowl then a ladle of soup on top.
Freezes well.
