Easy Keto Bread
Saw this on Instagram and had to try it. Blend 2 eggs with a cup of cottage cheese. I used an immersion blender in a jar. Pour onto a parchment paper lined cookie sheet. Mine was about 6x10 inches (so you could probably use 9x13 pan). Bake at 350* until golden on top (mine took about 22 minutes). Flip onto a cooling rack. Once cool, I cut in half and used as a wrap with deli turkey, cheese, and pickled onions.
I didn’t have quite a cup of cottage cheese so I need to make this again. I think the person I saw make it used some Italian seasonings. The texture was like scrambled eggs. Definitely works if you’re gluten free or looking to increase protein intake.

PS - Grab a rotisserie this weekend and make this easy yum dish - or at least bookmark it for when your tomatoes are going bonkers. I bought tiny tomatoes from Costco and pesto from Aldi.

Thank you for sharing. It's amazing what you can create in the kitchen. This weekend, we made banana muffins, made with chickpeas and zero fat yoghurt. The only problem, they didn't last long.
