RECIPES I TRIED AND LIKED
Hearty Hamburger Mushroom Bake is a bit like a breakfast casserole but different than anything I’ve made. Perfect for the protein lovers at your table. I love that we had leftovers (hardly ever!). Use a food processor to finely chop mushrooms and your crew will never know they’re there. I also used it to combine the 6 eggs and cream cheese.
Roasted Mustard Potatoes - wasn’t sure if my people would cheer or revolt. It’s an interesting spin we will definitely see again. I halved the recipe. No leftovers.
If you’ve never made chicken shawarma before, try this one from the Lazy Genius. Crowd pleaser. Perfect for the grill.

AT THE TABLE
Our youngest is thoughtful and witty. I’ve used a hashtag on Instagram #SchaefferSays to log a few of my favorites. Monday he asked at breakfast, “How are we more than conquerors?” This was prompted from singing Romans 8:37 with Seeds Family Worship the night before. Stream all their music free, here.
Have elementary aged kids? Check out Seeds’ live family worship Sunday nights 5pm central on Facebook or YouTube. If you miss it, check the replay.
My husband, John, writes devotions for Seeds Family Worship, who has a campaign for families to memorize 20 verses in 2020.
Recently he wrote about John O’Leary, who as a child was playing with matches and gasoline in the garage. This is never good and you can imagine the horror that happened afterwards. The doctors didn’t expect him to survive the first 24 hours. It is a fascinating, courageous, and hope filled story. Read parts one, two, and three to your family at the table. Especially if you have pyromaniacs.
John is quite the reader. Here’s what he has read in April.
MOTHER’S DAY
I saw a meme that said, “Reminder for husbands: school won’t be sending home a card this year…” and it made me laugh out loud. Beautycounter has 20% off for first time customers (which could be your husband) until midnight tonight (4/30). I’m happy to help him shop for you. Countertime has changed the surface of my skin. Even if I weren’t a consultant, I’d tell you to use it.
MOTHERS + SONS
Yesterday when working with my aspiring food photographer teenager the words from Mothers and Sons: Raising Boys to Be Men came flooding back. I’m not ready to share but is what I’m pondering these days. It’s a tired but true adage “The days are long and the years are short.”
MACARONI
Ever wondered why Yankee Doodle called a feather ‘macaroni’? Now you know.
That’s a wrap! Some of the links within are affiliate and I receive a small portion of the sale with no added cost to you.
