Chocolate Chip Cookies
Last week I made cookies and realized I’m not a baker. After asking all the questions to my professional cookie friend and still not getting it right, I found the science behind a good chocolate chip cookie. Will reference that post before trying again.
Chicken Salad
Did you see this comparison of 4 famous chicken salad recipes? It looks like north vs south = Ina, NYT, Pioneer Woman and Southern Living. We ate chicken salad last night and I snuck in shredded fermented carrots. What do you like in yours?
New to Me
Alexandra Cooks blog is a breath of fresh air - local food, in season. Thanks to reader Sarah Bell for passing it along.
Those interested in fermenting: Farmsteady has lots of recipes and resources.
Happy to report that my favorite salt in all the earth can now be purchased economically in 5 pound packages via Amazon.
Took the plunge with the encouragement of BOGO offer and bought a Masterclass subscription. I’ve learned so much in just a week and highly recommend it. There is something for everyone in your family. The cooking classes thrill me, of course - my oldest son is learning photography and Husband wants to learn about writing from the masters.
Upcoming Zoom Classes
Fermented Foods - Tuesday, May 19, 7pm CST $40
Fermented foods bring multiple benefits to overall health, to include immunity, nutrition, enzymes and help with detoxing. They are an easy way to preserve an abundance of harvest (FarmShare basket, anyone?!). Plus the taste is unparalleled! Food can be medicine and this food is at the top of the list for my family.
Basic Knife Skills - Friday, May 22, noon CST $20
Do you dread time in the kitchen? Could it be that your knife skills could be sharpened? Maybe you need a sharper knife. (This is the one I have and recommend.) In class we will practice using these whole and fresh: onions, garlic, celery, carrots, cucumber, apple, cauliflower, broccoli and cabbage. Let’s hone your knife skills and make chopping a joy.
Kombucha - Friday, May 29, noon CST $35
This popular health drink is slightly sour and sweet, filled with probiotics and its composition aids our liver for detoxification. Watered-down kombucha can purchased for $3/pint - or learn to make robust and flavorful kombucha for pennies a gallon.
Mayonnaise & Salad Dressings - Tuesday, June 2, noon CST $35
If you’re looking for the next baby step to improve your health, work on eradicating inflammatory oils from your diet. Inflammation is the root of disease. Most store-bought salad dressings are made with cheap inflammatory oils like soy, vegetable or canola. Salad dressings are simple to make and keep for weeks in the fridge. Plus the options are limitless! In class we will make mayonnaise, ranch, Italian, and creamy cilantro with tahini plus I’ll share recipes to other favs.
