Packed with nutrition, I don’t feel guilty eating these for breakfast or sending it with my kids. Last week we took them to a swim meet.
Ingredients
1/2 cup (1 stick) softened butter, or coconut oil (109g)
1 cup (213g) brown sugar
6 eggs
2 cups (16oz jar or 500g) peanut or almond butter, I use natural PB but Jif works great.
1/2 cup (170g) honey
1 tsp vanilla, optional
4 cups (320g) regular or quick oats, I use 2c of each
2 tsp baking soda
1 tsp sea salt
1 cup (150g) chocolate chips or some M&Ms
1 cup (120-170g) raisins, currants or craisins
1 cup (120g) shredded coconut - Natural Grocers or Azure has best texture
1 cup (125g) pecans or walnuts, chopped
hemp hearts, up to 1/4 c
Instructions
Cream butter and sugar in a mixer. Mix in honey and peanut butter. With mixer running, add eggs one at a time until blended. Mix vanilla, soda, and salt. Stir in oats, chocolate, raisins, coconut, pecans, mix well. If you have a Kitchen Aid mixer, add one cup at a time of final ingredients - the bowl gets very full.
Refrigerate at least an hour or overnight. Longer if using coconut oil.
Use a cookie scoop to make uniform cookies. I prefer using parchment paper.
Bake at 350 for about 12 minutes till lightly golden. Bake time depends on your oven, bakeware, size of cookies and how often you open the door. I have a convection oven which has a fan inside and generally runs hotter. I pull them out after 10 minutes and they’re a bit gooey still. Or bake 325 convection for 12 minutes.
Cool then transfer to cooling racks. Store between sheets of wax or parchment paper. Otherwise they will stick together.
Bonus Goulash Recipe
After being away from home for a swim meet, my body was craving homemade. This beef goulash hit the spot. It’s super easy and uses 4 cups of nourishing broth. I try to buy pasta from Italy because GMOs are banned in Europe + the Italians tend towards organic farming practices. Read labels, you can find Italian pasta at Kroger and Trader Joe’s.
