I’ve frozen broth in everything over the years. Glass proved unreliable, often breaking no matter what I tried. Plastic bags often rip and make a mess once thawing. Next fav was reusing sour cream or yogurt containers. My life was forever changed with two souper cubes Melanie gave me. They’ve changed the way I use broth.
Frozen broth pops out easily, unlike in the sour cream containers. The silicone easily releases the broth. There isn’t an added step of submerging the broth in warm water to get it to unstick. If I find I have more broth than 8 cups, it’s easy to stack frozen cubes in a gallon freezer bag then remove what I need when needed.
I have the one cup portions. Two trays give me 8 portions of one cup each. One cup thaws relatively quickly and is an amount that is easily used.
There are also 2cup portion souper cubes I’ve considered purchasing — like for single servings of soup. But also, I have sour cream containers for that. Ha!
They are dishwasher safe - woot! They come with a lid that makes for easy stacking. On the side are fill lines — if you wanted to be precise with 1/2 or 1c portions. I’ve frozen broth and juice (separately, of course!) but these would have been perfect in my baby food making days!
Stevia Free Protein Powder
This week I asked on Instagram for stevia-free suggestions for protein powder. I’m not against stevia per se, I just don’t like the taste of non-nutritive sweeteners. I’m looking to increase my protein intake via smoothies.
The top contenders were in no particular order: Garden of Life organic whey protein (lightly sweetened with cane sugar), unflavored Whey from Promix Nutrition, and Vital Proteins Collagen Peptides (many add this to coffee).
If you have a favorite protein powder that is not sweetened, I would love to know. Reply to this email.
Orzo Chicken Casserole
I follow Kate from Naptime Kitchen and in today’s newsletter she shared a recipe for Greek Lemon Chicken Orzo Casserole. It looks delish, makes enough for a crowd and would be perfect to give some away! I think it would be a nice salad on a picnic (skip the baking). I printed it to make later.
