Make this for St. Patrick’s Day dinner - or take to your next party!
My family likes it tart so I add extra brown mustard and sauerkraut. Shift it any way your family would enjoy. And it's so easy!
Ingredients
1/2 pound corned beef, diced
1 pkg. (8 oz) cream cheese, softened
1 cup sauerkraut, drained well
1/2 cup sour cream
1 T ketchup
2 t spicy brown mustard
Rye crackers or rye bread
Instructions
1. Preheat oven to 350 degrees.
2. In a medium size bowl mix all ingredients. Spoon into a pie plate or casserole dish.
3. Bake for 30 minutes or until hot and bubbly. Serve warm with crackers or bread.
Optional: drizzle thousand island dressing on top for a bit of extra sweetness.

St. Patrick, the Missionary
The celebrations on March 17 first began when a Feast Day was created in homage to St. Patrick. As a young man, he was enslaved and taken to Ireland, where he either escaped or was released. Once in his homeland of Britain, he had dreams of the Irish and their need for a Savior. He went back to his captors in Ireland as a missionary. Having been the Patron Saint of Ireland, he died around the fifth century, which means that his passing came 12 centuries prior to the modern version of the holiday first being observed in 1631. Surprise someone with this bit of trivia today!
