Skillet Hash Browns & Eggs
Heat your skillet medium high (5 out of 10 on my stove). I used 10” stainless steel pan. I’ve used smaller pans with fewer ingredients. Heating the pan adequately could take 5 minutes on an electric range. Be patient. Waiting for the skillet to heat thoroughly is key to keep it from sticking.
Meanwhile, shred a few potatoes on a couple paper towels (for moisture absorption + easy transfer to pan.) I used 3 small potatoes from my mom’s garden. One large potato would be equivalent. I don’t peel the potatoes. You definitely could if the texture bothers you.
When pan is hot (flick water and see if it immediately evaporates) add enough oil to cover the bottom of the pan. I use avocado oil. The oil should shimmer.
Put potatoes in oil. I like to add a thin layer of potatoes then sprinkle with salt. Repeat. Potatoes need a lot of salt.
Let the potatoes cook, uncovered, while you scavenge the fridge for eggs and cheese. Leave the potatoes alone. If your pan was hot & you are generous with the oil there won’t be problems.
My potatoes were looking dry at this point so I added a few pats of butter. It might have been fine without the extra butter but as a general rule I don’t say no to an opportunity to use butter. I don’t recommend butter in the beginning because the milk solids could burn. Butter can be added on top of the potatoes, no prob.
I used 4 slices of cheese here but you can definitely use shredded. Cover potatoes with whatever cheese you have. Or, leave off the cheese.
I don’t recommend skipping cheese, ever really.
Next crack eggs over the cheese. I’ve cooked as many as 6 and as few as 2.
Cover. Set a timer for 2 minutes. Then check the whites. Mine were still under cooked so I let it go another minute. I like a runny yolk. If you don’t then let it cook longer.
Sprinkle with salt and red pepper flakes.
