Pancakes are complete divas. I’ve destroyed more than one pancake in my career, flipping it too early. If you’ve not made crepes, I hope to convert you.
Crepes are better because:
More protein
Pantry staple ingredients
Memorable recipe
Sweet or savory
Sounds fancy
Here’s the crepe recipe I use:
1 scooped cup of all-purpose flour (GF varieties work too!)
3 eggs
1 ¼ cup milk (or milk alternative), possibly more
½ t sea salt
**See? Simple ingredient list. Make it a couple times and you’ll have it memorized too. No fussy baking soda or baking powder. Who can remember a pancake recipe?!
I’ve experienced that if the batter is allowed to sit for 15 minutes before making crepes, it’s better. If you’re in a rush just go for it.
My mom was here as I made them on a cast iron skillet. She said, “I have a crepe pan in the basement if you want it. I’ve not used it in 40 years.” I encouraged her to give it to someone else because I try not to allow specialty pans or appliances take up precious real estate. Cast iron works beautifully for most things and it’s non-toxic! Key for crepes is to be sure the pan is hot (I use medium heat) and ample fat before pouring a thin layer of batter in the pan. I use butter or coconut oil.
Last weekend I served crepes with chocolate gravy (less ¼ c sugar) for breakfast. Usually my kids love Nutella but I didn’t want to go to the store. Chocolate gravy is super simple. Of course we dolloped with fresh whipped cream. Arkansas strawberries would have been perfect but we scarfed those within minutes the day before. Peanut butter and jelly is a good combo too.
Double the batch and make ham and cheese crepes for dinner! Or start with savory crepes for dinner, enticing reluctant eaters with sweet crepes as a reward. If you’re adventurous, wilt and add a bit of spinach, add mushrooms if you dare. I actually prefer the texture of wilted kale. You do you, Boo!
