JULIE! It finally happened. I just made the gingerbread bars and oh my word they are delicious. I am going to cut the remainder into squares to bring to my daughter's hockey games tomorrow. I used a 9x13-inch glass pyrex bc I didn't have a 10x15-inch pan... I pulled out my 13x18-inch sheet pan but that looked too large. The 9x13-inch pan worked great — I didn't grease it or use parchment paper as you said. They're probably a little thicker than yours but they don't seem too thick at all. My kids are in heaven. Thank you!!

oh! So happy you tried. Now I need to try it in 9x13 pan. Never occurred to me to do THAT. As a spin if you make it again, you can grate fresh ginger into it to make it extra gingergy (I can't remember if I wrote that in the recipe).

They were a smashing success!!! Seriously, a hockey team of mostly boys, 4 girls (my daughter included), and all the parents raved. Thank you! Making them again tomorrow. This is such a brilliant recipe because it is SO EASY and it MAKES SO MUCH!!! Cookies can be so time consuming. I cut these into small-ish rectangles, so they could potentially reach many mouths, which they did, but I also saw multiple people reaching for seconds (and thirds). Thank you!!! xo
