A friend and neighbor boasted about the ease and size of his smoker…to the wrong person. I quickly asked, “Do you ever have extra room when you smoke meat?”
All the time he said.
So I took him 4 whole birds Saturday afternoon. Sunday night I was deboning all the glorious protein while dreaming of what to do with said meat.
If you don’t have such a generous talented neighbor, buy rotisserie chicken and make one of these recipes.
Making broth was at the top of my list.
Tomato Basil Oven Risotto - I skipped the onions and mushrooms this week. This is so good and EASY. I found baby fresh mozzarella on clearance at Kroger and used it.

Not made with chicken but made in my kitchen this week:
Lasagna with bechamel (something like this) for the freezer and gifts.
Caramel Sauce made with dates?! and without refined sugar. I used coconut milk. Dates are incredibly good for us with a host of minerals and fiber. If you have a high powered blender, this recipe is strongly advised…with a pinch of self control, of course.
Oatmeal Jam Bars - recipe is for 13x18 pan, halve for 9x13 pan
