I’m forever trying new recipes for breakfast. My preference is something heavy on protein, makes a lot, and of course we like it. This recipe from @the_villalobos_homestead on Instagram hit all the parameters. The texture is similar to a dutch baby yet more cake-like. We enjoyed with sour cherry jam and whipped cream. One child preferred a drizzle of maple syrup. It is best fresh from the oven but was enjoyable cold the next day, too. EDIT: I now prefer it cold over warm. Both ways are yum.
I’m not a precise baker. I’ve made this a bunch of times, each time with different ratios of egg/flour/cottage cheese. I think because of the amount of eggs it is quite forgiving. Give it a go! As written is the original recipe.
EDIT: made as written you’ll have a cake-like texture. It’s more like a Dutch baby when using less flour.
Dump everything in the blender. If you don’t have a blender, use a mixer and start with eggs then cottage cheese then dry ingredients.
12 eggs
1c cottage cheese*
3 c AP flour (haven’t tried with GF but I bet it would be fine)
1t salt
1T baking powder
splash vanilla (almond extract is nice too!)
berries on top - before or after baking.
*EDIT* - once I didn’t have cottage cheese and used a banana instead. It turned out like banana bread!
Grease 8.5 x 11 baking dish. Pour in above mixture and berries if adding. Bake at 350 until middle is puffed and golden. Baking time depends on how warm the oven is and the material of your pan. @the_villalobos_homestead used a glass dish and started with a cold oven and it baked about 50 minutes, rotating pan halfway through cooking time.
The first time I made this I halved the recipe and baked in a 9” ceramic pie dish in a preheated 350* and it was finished in about 30 minutes. Your eyes and nose will help you decide.

Yesterday I baked a frozen burrito for lunch that I’d batch made who knows how long ago. It tasted so good.
Tuesday I made a GIANT batch of creamy golden chicken soup (like 2 gallons) and used Costco rotisserie chicken, red lentils and quinoa. I’m freezing most (in yogurt containers) and will probably give at least half away. Dad’s birthday is this weekend so my parents will get some.
Kentucky Living
I saw my sister and nieces this past weekend at a dance competition. It was so fun! My sis was surprised drove an hour for a 2 minute routine. I told her it was better than driving 20 hours round trip! [If you’re new here, my husband and I moved back to Kentucky after 20 years in exile Arkansas.]
