Spring has sprung in the South. Birds are singing, buds are bursting with color. I feel so alive in spring! And I just wanna be outside all the time. Below are recipes to make ahead, or require little prep so you can maximize time outside. The first two recipes are easy enough to be made on the same day. Make a mess and clean it up once.
Last week, I made 4 pounds worth of Sloppy Joe’s. This is an easy recipe to whip together and eat for a couple meals then freeze the rest either in one lump sum or in ¾ cup portions for a quick lunch later. Perfect for empty nesters. Note about the recipe: I omit sugar and Worcheshire. I probably used more tomato sauce and let it simmer a little longer to evaporate the liquid and concentrate the flavor. Bonus: serve sauerkraut or other fermented veggie on the side.
I made Cheeseburger Bites in Instagram Stories. They’re a true crowd pleaser. Sort of a cross between meatloaf and quiche but something different all together. They store well and reheat easy - or just eat them cold. Perfect protein for a picnic or to grab and go.

This roast chicken with clementines looks super delicious, comes together quick but does require an hour in the oven. It will be on my table soon before clementines are gone for a while.
Little Rock - Save the Date!
Monday, April 5th I’m throwing a birthday party for myself! I am halfway to 90 and always looking for a reason to celebrate. Everything will be outside (or in my garage if weather threatens) so there will be room to spread out. If you live in Little Rock, please make plans to stop by from noon-5pm. The menu hasn’t been finalized but I will have food! If we’ve not met in person, I want to meet you. Please come!
